Many consumers purchase a product on the. basis of the sensory experience which it delivers. While there are many other factors affecting the financial success of a food company, the backbone for continued success rests with the quality of the products developed and maintenance of the product quality. Sensory evaluation is a part of the product development and maintenance function and an important contributor to marketing success. Discussions will be made on how sensory evaluation can be used for product development, improvement, and maintenance. Also, brief discussions will be made on sensory evaluation methods, sensory panel, physical reguirements for sensory testing, and experimental design and analysis of sensory tests.
